The soybeans are washed with water and subject to a special mechanical steam extraction system that removes the soy soluble sugars (including soy raffinose and stachiose, which cause undesirable flavors and odors), leaving a protein and fiber rich fraction, fully functional and clean from unwanted flavors. The final product is then dried using a special food grade drying system that protects the product from protein denaturation and contamination.
Soybeans are legumes that are high in fiber, potassium and folate, and contain all of the essential amino acids, making soy protein a complete protein. In addition, soybeans contain antioxidant isoflavones and the omega-3 fatty acid alpha-linolenic acid (ALA).
